Gluten-Free Vegan Grilled Cheese

A lot of people think I only eat salad and steamed broccoli when they first find out about my diet. However, that couldn’t be further from the truth! My diet is full of healthy and delicious meals that are super quick and easy to make! This grilled cheese sandwich is one of my (and my dad’s) favorites!

Ingredients

  • Gluten-free + vegan sandwich bread

  • Kite Hill Ricotta Cheese

  • Roasted red peppers

  • Cooking oil

Homemade Pesto

  • 1 cup fresh basil leaves

  • 1 teaspoon lemon juice

  • 3 tablespoons pine nuts

  • 1/3 cup olive oil

  • Salt, pepper, parsley, and oregano to taste

Optional Ingredients

  • Onion

  • Olives

  • Pickles

  • Arugula

  • Tomato

  • Sautéed mushrooms

  • Artichoke hearts

Instructions

  1. Combine all of the pesto ingredients into a food processor, and blend until smooth.

  2. On one side of the bread, spread the Kite Hill Ricotta Cheese, and add the roasted red peppers.

  3. On the other side of the bread, spread the homemade pesto, and add any other ingredients you would like. My favorites are artichoke hearts, arugula, and onion!

  4. Close the sandwich.

  5. Put cooking oil in a pan, and bring it to medium heat.

  6. Heat the grilled cheese on each side until the bread is toasty, and enjoy!
