Chickpea, Tomato & Arugula Salad

This chickpea, tomato, and arugula salad is the best salad I have EVER made! It’s fresh, creamy, and incredibly healthy. I often make it at the beginning of the week with hopes it will last me a few days, but it’s usually gone within a few hours. This salad is so light, refreshing, and perfect for summer snacking!

Ingredients

  • 1 15 oz. can of chickpeas

  • 3-4 Roma tomatoes

  • 2 hearty handfuls of arugula (kale or spinach would work, as well)

  • 1 tablespoon tahini

  • juice of 1/2 lemon

  • 1/8 teaspoon salt

  • 1/8 teaspoon black pepper

  • 1/4 teaspoon onion powder

Directions

  1. Drain and rinse the chickpeas.

  2. Chop the Roma tomatoes into roughly equal bite-size chunks.

  3. Combine the chickpeas, chopped tomatoes, and rinsed arugula in a medium to large bowl.

  4. Add the tahini, lemon juice, salt, black pepper, and onion powder, and mix until combined.
