Health Update #1

It’s been about three months since I started a plant-based, gluten-free diet, and I could not be happier with the results! If I could have anticipated the far-reaching effects of changing my diet, I would have done it so much sooner. If you remember from my initial post about completely changing my diet (here), October marked my seventh round of antibiotics in 2018 alone. This served as my wakeup call, and I vowed to change my health and my life for the better. And the best thing about the change? It’s actually working!!!

Three months later and I have not been sick one time—not even a cold. If you would have told me I could live an infection-free life just a year ago, I would have thought you were joking. I thought my body and my immune system were limited by my medication, but it turns out that food has so many magical healing properties. It is amazing that something as simple as the food we eat can drastically determine how our bodies feel. Simply changing how I eat has changed my life, and I hope I can serve as an inspiration to change your life, too!

I am no longer simply surviving with an autoimmune disease, I am actually thriving for the first time since before I was diagnosed—and it’s SO awesome! I’m also not just eating salads for every meal of every day. In case you’re curious, here’s a typical day of what I eat!

  • Breakfast: Superfood Smoothie—You can find recipes for some of my favorites here!

  • Lunch: Soup/chili and a side salad -OR- Burrito bowl

  • Dinner: Veggie stir fry with brown rice -OR- Gluten-free pasta with veggies

  • Snacks: Simple Mills Almond Flour Crackers/veggies with hummus -OR- Banana with almond butter -OR- Fresh fruit
