No-Bake Vegan Protein Bars

These homemade vegan protein bars are no-bake, gluten-free, grain-free, and sugar-free! They are delicious, easy to make, and only take 10 minutes to prepare. This recipe makes 8 bars, but you can easily double or triple the recipe to make lots for the week or for your family.

Ingredients

  • 1 cup raw walnuts coarsely chopped

  • 1 cup unsalted almonds coarsely chopped

  • 1 cup raw pumpkin seeds

  • 2 tablespoons chia seeds

  • 1 tablespoon flax seeds 

  • 2/3 cup coconut flakes

  • 2 scoops protein powder (You can use any protein powder. For this recipe, I used Orgain Organic Protein Powder in Vanilla Bean. Use “JOSIEP30” for 30% off your first Orgain order!)

  • 1/3 cup cacao powder

  • 1 teaspoon maca powder

  • 1/2 teaspoon cinnamon 

  • 3/4 cup peanut butter (substitute other nut butter, if desired)

  • 3 tablespoons melted coconut oil 

  • Pinch of salt 

Directions

  1. Combine all ingredients into a mixing bowl.

  2. Stir until all ingredients are thoroughly mixed and there are no dry clumps of powder or nuts.

  3. Pour mixture into an 8x8 inch pan, and evenly smooth out the mixture. If you don’t have a square pan, make your own square container out of aluminum foil.

  4. Place the pan into the refrigerator for at least two hours, or until the mixture is fully set.

  5. Remove from the refrigerator, and cut the square into 8 equal bars.

Note: The bars hold-up best right after refrigeration. Store extras in the refrigerator after cutting, as too warm of an environment might cause them to melt.
