Vegan & Gluten-free Baked Chocolate Doughnuts

This baked chocolate doughnut recipe has been one of the most requested recipes from the ‘gram. They are vegan, gluten-free, and sooo delicious! I may or may not have eaten five in one day! Not to mention, they come out beautiful for pictures, table centerpieces, or gifts.

To start, you’re going to need doughnut trays. I got these ones from Amazon, and they work great!

Baked Chocolate Doughnuts
  • 2 1/2 cups gluten-free flour

  • 1 cup raw cane sugar

  • 2 teaspoons baking soda

  • 1 teaspoon salt

  • 1 1/4 cup almond milk

  • 1/4 cup melted coconut oil

  • 1/4 cup apple cider vinegar

  • 1 teaspoon vanilla extract

Chocolate Glaze

  • 1/4 cup dairy-free chocolate (chocolate chips or part of a chocolate bar work well)

  • 2 tablespoons & 1 teaspoon almond milk

  • 1/2 cup powdered sugar

Optional toppings

  • shredded coconut

  • sprinkles

  • walnut pieces

  • mini dairy-free chocolate chips

Directions

  1. Preheat oven to 375 degrees.

  2. Lightly grease two doughnut pans.

  3. In a large bowl, mix all of the dry doughnut ingredients together—gluten-free flour, cane sugar, baking soda, and salt. In a separate bowl, mix the wet doughnut ingredients—almond milk, coconut oil, apple cider vinegar, and vanilla extract. Make sure the coconut oil is melted. If it’s not melted, heat it in the microwave until melted and warm the wet mixture enough so that the coconut oil does not re-harden upon mixing.

  4. Pour the wet mixture into the dry mixture and mix until combined. The batter will be a pourable consistency.

  5. Pour the batter evenly into the doughnut trays, leaving a small space between the batter and the top of the doughnut cavity. The doughnuts will rise while baking. Bake for 12-14 minutes, or until the the doughnuts are completely baked on the top. Remove the trays from the oven and let them cool completely before removing the doughnuts from the mold.

  6. For the glaze, melt the chocolate and the almond milk in the microwave together. Once melted, mix in the powdered sugar until the glaze is smooth and without clumps. Let the glaze thicken for 10 minutes before glazing the doughnuts.

  7. To assemble the doughnuts, dip the top of each doughnut into the glaze. Sprinkle any toppings onto the doughnut before the glaze hardens.
