Cucumber Tomato Salad

This cucumber tomato salad is one of my favorites, and it’s perfect for the last few weeks of summer! It is easy to make in small or large amounts by simply increasing or decreasing the amount of each ingredient you add. Sometimes I just want it as a side dish for dinner, and other times I meal prep this salad for the entire week. It is simple, super refreshing, and it only takes about 10 minutes to make!

Ingredients

  • 1 medium-large cucumber

  • 1/2 pint of cherry tomatoes (A typical container of cherry tomatoes is 1 pint.)

  • 1 tablespoon lemon juice

  • 1 tablespoon olive oil

  • Spices: salt, pepper, onion powder, and basil to taste

Optional

  • 1/2 onion

  • 1/2 can garbanzo beans

Directions

  1. Chop the cucumber into bite-size pieces, and cut the cherry tomatoes in half.

  2. Place chopped cucumber and tomatoes into a mixing bowl, and add the remaining ingredients.

  3. Optional: Add in chopped onion or garbanzo beans for extra flavor or protein.

  4. Stir until the lemon juice, olive oil, and spices are evenly distributed.

  5. Keep chilled, and enjoy!
